A Hodge Podge of Sorts
Contents of your fridge runnin' low? Sometimes you just gotta whip up what you've got! Luckily I had some quinoa in the pantry and a few veggies to make this dish happen. Sauteed mushrooms, red bell pepper, zucchini, and yellow squash on a bed of quinoa. A side of Vegan homefries rounded out this yummy plate. So many textures and colors. Looks just like fall!
