Portobello Mushroom Burger - Baked Sweet Potato Fries - Roasted Asparagus
I love making Portobello Mushroom Burgers. So easy and delicious! Whether on the grill or sauteed, Ports make for a hearty addition to any vegan recipe! For sides, I sliced and baked one sweet potato @ 425 degrees for about 30 minute, flipping the fries halfway during baking. Once they're hot out of the oven, a light sprinkling of Kosher salt finishes off this side. The asparagus was drizzled with a tiny bit of Extra Virgin Olive oil and Kosher Salt then roasted @ 400 degrees for about 20 minutes. The sesame seed bun is the Ezekiel brand that can be found in the freezer section of most health food stores, and many commercial grocers too. I just love the breads (and pastas) from this brand! Any frozen fruit can be added to water in place of ice. Here I've added frozen blackberries!
Et voilĂ ! Burgers made the healthy way... And, of course, VEGAN!
