Snack Day


Kale Chips

I love being inspired by the grocery store. Picked up some yummy kale and decided to try my hand at homemade kale chips. I scoured the internet in search of a good kale recipe and came across many that involved cashews, numerous spices and a vitamix, all of which I do not have. But I what I did have was cashew butter. So I decided to come up with my own special sauce! Unfortunately, I didn't really measure anything because I was eyeballing and just going with the flow... praying to the vegan cooking gods it would come out somewhat edible. I am so happy with the results. I do get the feeling, however, that you really can't mess kale chips up.

Ingredient list: Cashew butter, nutritional yeast, lemon juice, water, agave nectar, turmeric, ginger, red pepper flakes, salt and pepper. Baked at 250 degrees for about 35 minutes (I think next time I'll try 350 degrees)



My Monday afternoon snack. Surprisingly delicious. Nutty and cheesy goodness on a plate!

While I've got the cashew butter out, how about a little sweet treat? Try pitted dates topped with cashew butter(almond butter would work too!) and sprinkled with cinnamon. Can't believe something so easy tastes so rich and divine. Paired it with some hot chocolate for this dreary overcast day. Love it!
